Kumato® torrijas with mozzarella and pesto

Ingredients (4 servings)

  • 4 Kumato® tomatoes
  • Brioche or milk buns
  • 1 ball of mozzarella di bufala
  • 12 capers
  • 4 teaspoons pesto sauce
  • Rocket greens

For the pesto sauce:

  • 30 g pine nuts
  • 30 g Parmesan cheese
  • A bunch of basil leaves
  • Extra virgin olive oil

Method 

Start by peeling the Kumato® tomatoes and pulsing them with a hand blender to obtain a flavourful tomato juice. Square off the milk buns by removing the crust and forming them into rectangular bars.

Place the buns in a deep dish and cover them with the Kumato® tomato juice, allowing them to soak for a few minutes. Spoon tomato on top as well.

While they are soaking in the juice, prepare the pesto by grinding all the ingredients using a mortar and pestle until a homogeneous paste is obtained. Cut the mozzarella into slices about half a centimetre thick.

In a very hot frying pan serving as a griddle, sear the outside of the torrija, marking each side for one minute, and remove them carefully so that they do not break apart. Cover half of each torrija with the mozzarella, add a spoonful of pesto and garnish with three capers and a leaf of rocket.
