Caprese tomato salad

Ingredients

  • 4 sliced Kumato® brand tomatoes
  • 230 g balsamic vinegar
  • 230 g fresh mozzarella slices
  • 1 cup fresh basil leaves cut into strips (reserve 8 whole leaves for garnish)
  • 1/3 cup (60 ml) extra virgin olive oil
  • Coarse sea salt
  • Freshly ground black pepper

Method 

  1. Heat the balsamic vinegar in a small saucepan and reduce it to half its original volume, achieving a syrupy texture.
  2. Refrigerate until ready to use.
  3. On individual plates, alternate the tomato and mozzarella slices, starting and ending with tomato.
  4. On each plate there should be an arrangement of 4 slices of tomato and 3 slices of mozzarella.
  5. Sprinkle the tomato and cheese with coarse salt and ground pepper, drizzle with olive oil and sprinkle with basil.
  6. Garnish the dish with a line of the reduced balsamic vinegar, next to the tomato salad, and a few basil leaves.
  7. This salad is tremendously simple, yet impressively plated.
