Caprese tomato salad
Ingredients
- 4 sliced Kumato® brand tomatoes
- 230 g balsamic vinegar
- 230 g fresh mozzarella slices
- 1 cup fresh basil leaves cut into strips (reserve 8 whole leaves for garnish)
- 1/3 cup (60 ml) extra virgin olive oil
- Coarse sea salt
- Freshly ground black pepper
Method
- Heat the balsamic vinegar in a small saucepan and reduce it to half its original volume, achieving a syrupy texture.
- Refrigerate until ready to use.
- On individual plates, alternate the tomato and mozzarella slices, starting and ending with tomato.
- On each plate there should be an arrangement of 4 slices of tomato and 3 slices of mozzarella.
- Sprinkle the tomato and cheese with coarse salt and ground pepper, drizzle with olive oil and sprinkle with basil.
- Garnish the dish with a line of the reduced balsamic vinegar, next to the tomato salad, and a few basil leaves.
- This salad is tremendously simple, yet impressively plated.
